Maika is part of the sixth generation of Azafranes Manchegos SL, the oldest company in Spain dedicated to the artisanal production and commercialization of saffron. They are located in Alcalá del Júcar, Albacete, in the region of Castilla la Mancha, a privileged enclave where the best saffron, the saffron of La Mancha, is cultivated. The saffron that we use in many of our dishes has the Protected Designation of Origin “Azafrán de la Mancha.”
